docs(config): remove remaining owner npub examples

NGIT_OWNER_NPUB stopped configuring ngit-grasp before the first release, but one deployment example and two relay fixtures still implied that it selected the operator identity. The tests silently generated unrelated fallback keys instead.

Use NGIT_RELAY_OWNER_NSEC in the fixtures and architecture example so documentation and exercised startup behavior match the persistent identity used for NIP-11 and NIP-42.
