Prepare the 2.1.0 stabilisation release after the post-2.0 production sync cycle. The release substantially improves proactive-sync reliability, compatibility, resource accounting, and recovery without adding a new sync feature. Promote the accumulated Unreleased changelog, add an upfront release summary, advance the comparison links, and keep Cargo plus both Nix package definitions on the same version. No runtime behaviour changes in this commit. Validated with Cargo metadata, Nix package-version evaluation, git diff --check, and nix build .#ngit-grasp.
